Not to confuse with Bún Chả Hà Nội, this is a “hybrid” version of Hanoi style and HCMC’s. Tendered, well-marinated pork grilled to perfection (if you don’t come during peak hrs) in glazing sauce. Drizzle the Viet’s national sauce (Fish sauce), give the dish a light toss, anddd dig in!
“Chả” here refers to the Chả Giò – Fried Spring Rolls as what people from my parents’ region called. Some call it “Nem”. “Chả” also refers to the grilled pork patty in Bún Chả Hà Nội. That’s why I prefer customer to tell me they want Fried Spring Rolls even they are Vietnamese because I need to make sure I get it right.
